Lean biltong is made from trimmed cuts with minimal fat. The texture is firmer, and the flavour is cleaner. It is the preference for most first-time buyers and works well as a straightforward high-protein snack.
Moist vs Dry: biltong can be pulled from the drying process at different stages. Moist biltong is softer and more tender, with a higher water content.
