Potjie pots, cast iron and built to outlast you

A three-legged potjie is not a Dutch oven with different branding. The legs hold it above coals rather than on them, the belly is deep so a stew builds its own steam, and the lid is heavy enough to seal without a gasket. Best Duty has been casting these in South Africa for generations, and the ones on this page are the same pots your family used, brought over rather than sourced from a lookalike. Buy the right size once and it outlives the braai you cook it on.

Choosing a cast iron potjie by size

Number 2 feeds two to four people and is the one most Canadian households actually use, because it fits a normal fire. Number 3 is the classic family size, four to six. Number 4 handles six to ten and starts to need a proper fire and two people to lift it. Number 6 is a crowd, a rugby weekend or a church braai. Pick by how many you cook for on a normal Sunday, not by the biggest day of the year, because an under-filled potjie cooks badly.

Seasoning a new potjie before the first cook

New cast iron arrives raw. Wash the wax coating off with hot water, dry it over the flame until there is no moisture left, then rub a thin layer of oil or fat over the inside and heat it until it stops smoking. Repeat that two or three times and the pot goes black and non-stick. Never scrub it out with soap afterwards, and never store it with the lid sealed shut. A wooden spoon, hot water and a dry fire are all the maintenance it needs.

What goes in the pot

Layer it and leave it alone: meat on the bottom, then onions, then the hard vegetables, then the soft ones, and do not stir. Six Gun Grill seasoning and BBQ sauce are the shortcut most South Africans use, and Ina Paarman's Sticky Marinade does the same job for chicken and ribs. Serve it over pap, which is what the maize meal and samp page is for, and put a bowl of chakalaka next to it.

Frequently asked questions

What size potjie pot should I buy?

Go by your normal Sunday, not your biggest day of the year. A number 2 feeds two to four people, a number 3 feeds four to six, a number 4 feeds six to ten, and a number 6 is for a crowd.

How do I season a new potjie before cooking in it?

Wash off the wax coating with hot water, dry it over the flame, then rub a thin layer of oil over the inside and heat it until it stops smoking. Do this two or three times and it goes black and non-stick.

Do you ship potjie pots across Canada?

Yes. Everything ships from our shop in Barrie, Ontario, anywhere in Canada.

What is the difference between a potjie and a Dutch oven?

A potjie stands on three legs above the coals instead of sitting on them, the belly is deeper so a stew builds its own steam, and the lid is heavy enough to seal on its own.
