Maize meal and samp, the South African staples

Maize meal is finely ground white corn, and pap, the porridge made from it, is the everyday food of South Africa. Samp is the same corn cracked rather than ground, slow-cooked with beans. We stock Iwisa, the brand most South Africans buy, plus Premier braaipap for the fire, and ship them across Canada.

Iwisa maize meal, for pap

Stiff pap (stywe pap) to eat with a stew or at the braai, crumbly pap (krummelpap) under a tomato and onion relish, soft pap with milk and sugar for breakfast. One bag, three dishes. Canadians can think of it as a cousin of polenta with its own texture and taste.

Cereals & Porridge

Samp and beans

Iwisa samp, soaked overnight and cooked slowly with sugar beans, is samp en boontjies, one of the oldest dishes in the country. Braaipap is the coarser grind that holds its shape next to the fire.

Koo

Pap en wors

Pap belongs next to meat off the coals. Chakalaka and Koo beans are on the Canned & Jarred shelf, and our biltong, made in Barrie, goes in the same box.

Frequently asked questions

What is maize meal?

Finely ground white corn, the flour that pap is made from. In Canada the closest thing on a shelf is cornmeal, but South African maize meal is finer and cooks to a smoother porridge.

What is samp?

Dried corn kernels cracked into pieces, cooked slowly until soft, most often with beans as samp en boontjies. It is heartier and chewier than pap.

How do you make pap?

Boil salted water, add maize meal, stir, cover and cook low for 20 to 30 minutes. Less water and more stirring makes it stiff; more water makes it soft. Krummelpap is made with less water still and left to crumble.

Can I buy Iwisa in Canada?

Yes. We stock Iwisa maize meal and Iwisa samp in Barrie, Ontario and ship across Canada.
